Nothing New

These are a few recent recipes flying out of  my kitchen.  They were posted on my personal blog, which is now set to private.  Try them and enjoy.  The Spiced Applesauce Muffins are such a hit.  I originally found the recipe on allrecicpes.com, and I altered it to suit my tastes.  YUM YUM


Banana pancakes
1 cup quick oats
1 cup whole wheat flour
3/4 c all purpose flour
1/4 c brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 c milk
2 tbsp veg oil
1 tsp vanilla
1/2 tsp cinnamon
2 mashed bananas
Mix dry. Mix wet. Combine. Stir in banana. Let stand 5 minutes

Zucchini Lasagna
This week we got quite a few zucchini in our CSA. So, I made up a yummy dish with the spaghetti sauce I made earlier in the week.


One layer of sliced raw zucchini
Top with dollops of cottage cheese
Sprinkle (generously) with shredded mozzarella cheese.
Slather on a good helping of spaghetti sauce.
Top with shredded Parmesan cheese
Bake at 350 for 30 min or until bubbly

Spiced Applesauce Muffins
1 1/4 cup applesauce (I like to use the natural, no sugar added)
1 c. granulated sugar
1/2 c. vegetable oil
2 eggs, beaten
3 Tbsp. milk
2 c. flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp salt

1. Preheat oven to 350.  Grease one loaf pan or 24 muffin cups
2. Combine wet ingredients and add in dry.  Mix well.  Pour into loaf pan or muffin tins
3. Bake 60 min for loaf or 18 min for muffins

Raspberry Compote
2 cups raspberries
1 Tbsp lemon juice or orange juice
1 cup sugar
1 Tbsp cornstarch
cook on medium until berries melt down and it thickens up
Serve with oatmeal, crapes and ice cream.  I like to just eat a spoonful of it out of the fridge when nobody is looking
