Old Fashioned Iced Oatmeal Cookies

 

On my way to 100 recipes in 100 days.  Here is recipe 93.

I hope you saved room for dessert.  These cookies are so wonderful.  I usually like my oatmeal cookies with raisins, chocolate chips, or craisins in them.  These are ‘plain Jane’ and slathered in old fashioned icing.  They have now hit the #1 spot on my cookie list.

Old Fashioned Iced Oatmeal Cookies

2 cups old fashioned oats

2 cups flour

1 Tbsp baking powder

1 tsp baking soda

2 tsp cinnamon

1 tsp ground nutmeg

1 tsp salt

1 cup unsalted butter, melted

1 cup granulated sugar

1/2 cup packed brown sugar

2 eggs

2 cups powdered sugar

5 Tbsp milk

1. Preheat oven to 350 degrees.  Spray 2 cookie sheets with cooking spray.

2. In a food processor, pulse oats until partly ground.  You just want a coarse meal.  Dump in mixing bowl and add flour, baking powder, baking soda, cinnamon, nutmeg, and salt.  Set aside.

3. In a large bowl, beat together the melted butter, sugar, and brown sugar.  Add the eggs one at a time.  Mix in the dry oat mixture and stir until well combined.

4. Drop by rounded tablespoons onto prepared cookie sheets.  Bake for 14-16 minutes until browned.  Let cool on cookie sheets for 5 minutes before placing them on a wire cooling rack to cool completely.

5. Once cookies are completely cooled, mix together powdered sugar and milk and pour over cookies. Let set to harden before storing.
