Taco Soup is a staple in our house during the cold fall and winter. I usually make it with ground beef, but this time I used chicken and a few different ingredients. It turned out really good!
We really like all the toppings on our soup. Sour cream, cheese, avocado, lime. The works!
Chicken Taco Soup {Slow Cooker}
1 yellow onion, finely diced
3 boneless, skineless chicken breasts
16 oz pinto beans, drained
15 oz black beans, drained and rinsed
15 oz whole kernel corn, drained
28 oz tomato sauce
28 oz diced tomatoes, do not drain
1/4 cup taco seasoning
7 oz diced green chilies
2 pkgs dry ranch dressing mix
4 cups water
1. Place chicken on bottom of slow cooker and top with remaining ingredients. Stir to mix seasonings. Cook on low 4-5 hours.
2. Remove chicken and shred. Return it to the slow cooker and heat through. Serve with taco toppings.

I made this last night and it was delicious - and super easy - thanks for the recipe. I didn't have ranch dressing packages on hand, so I looked up a recipe for a make-at-home substitute, and found a recipe that's just a mix of spices...no added salt/extras like are so often in packages. Also - I didn't have chiles (and honestly, I don't know what they are - do they come in a can?? Are they spicy??), so I used a green pepper instead.
ReplyDeleteGreen chilies do come in a can! You can buy them in the mexican/latin section of your grocery store! They have a mild spice....not too spicy! They are the chili that is in Rotel!
