There is a wine bar here in town that I just love. They serve a cheese tray with wonderfully fancy cheese and amazing desserts. I have become hooked on Brie.
I decided to make appetizers for dinner one night and I think I ate most of these. The sweet black raspberry topping was perfect with the slight salty taste of the cheese and shells. They were so easy to assemble and came out bubbling.
Brie Phyllo Cups
1 pkg frozen miniature Phyllo tart shells
6 oz Brie cheese, rind removed, cubed
1/4 cup spreadable fruit of your choice
1. Place tart shells on an ungreased baking sheet. Place one cube Brie in each and top with a drop of fruit topping.
2. Bake at 325 degrees for 5-7 minutes until cheese is melted and slightly bubbly.
Enjoy immediately.
