Cinnamon Glazed Sweet Potatoes

 

On my way to 365 recipes in 365 days.  Here is recipe 17.

I happened to have some sweet potatoes in the pantry and I knew they would make and easy side dish for dinner.  These were so fast to whip up.  Peel, chop, drizzle in glaze, bake.  EASY!  My husband said they taste like pie.

Cinnamon Glazed Sweet Potatoes

3 sweet potatoes, peeled and chopped in 1 inch pieces

1 Tbsp butter, melted

2 tsp olive oil

1 1/2 Tbsp brown sugar

1 tsp cinnamon

1/2 tsp salt

1. Preheat oven to 375 degrees.  Grease a baking dish.

2. In a small bowl, combine melted butter, olive oil, brown sugar, cinnamon, and salt. 

3. Place chopped sweet potatoes in baking dish and drizzle with cinnamon glaze.  Stir and bake 45-60 minutes until potatoes are soft.  Stir once while cooking.

*Sweet potatoes are so good for you.  Full of vitamins and have a great flavor.  Add these for your next side dish.
