I am not even sure where I found this recipe, but It was so simple and yummy. Cooking the noodles in chicken broth and lemon juice made the dish over the top. Gives the pasta so much flavor and hardly and sauce is needed. And lemon and garlic together is one of my favorite pairings.
Lemon Cream Pasta with Garlic Chicken
3 chicken breasts, flattened
1 lemon, zest and juice
2 tsp garlic powder
1 1/2 tsp pepper
32 oz chicken broth
1/2 lb linguine pasta, uncooked and broke in half
1 cup heavy cream
parmesan cheese for garnish
1. Season chicken breasts with 1 tsp garlic powder and 1 1/2 tsp pepper. Sauté chicken in half of the lemon juice in skillet on medium heat.
2. In a medium sauce pan, bring to boil chicken broth, half of the lemon juice, and lemon zest. Cook pasta until tender. There should be no liquid left. Stir in cream last
3. Slice chicken. Serve pasta in a large bowl with chicken on top. Garnish with parmesan cheese.
